The Indian food processing industry accounts for 32 per cent of the country’s total food market but the new growth in the segment is coming from the freshly prepared foods either delivered to your office or your home. Freshly prepared foods provide the break in monotony and the required variety most suitable for the Indian palate. But variety as you know brings complexity with reduced opportunity for automation. Ensuring food safety in such a situation becomes all the more challenging. There is less than 4 hrs between preparation and consumption, so there is no option to test and qualify the product. The only viable option left is to have an effective food safety management system in place.
