Webinar World Food Day 2021- Be a Food Hero

On World Food Day 2021, there is grim news India slipping to 101st Position on the world hunger index and the pandemic raging all over the world affected the food supply chain. So it was a time dig a little deeper and explore beyond the obvious, the history, mankind’s interaction with the food and the future. Our speakers discussed all this and the modern take on traditional food, and awareness after the pandemic.

In this panel, we had members from the different spectrum of the food industry. We had Mr.Krish Ashok, Author of Masala Lab and Chef Abhijit Saha Founder & Principal Consultant of Ace Hospitality & Consulting Pvt Ltd. Mr Krishna Ashok who had a unique outlook when it comes to food, he started by taking us back 2.7 billion years, how a single-cell organism transformed into what we call plant now. The evolution of food has been an interesting one. From domestication of chickens 65 million years to domesticating taste of some vegetables which were only meant for chemical defenses. Humans have perfected the kitchenware inline with to the food that needs to be
cooked or in other words its can be kitchenware thermodynamics. It was all about the evolving science around food, the flavor biochemistry, the tasting organs and how there are taste buds in the stomach which we might not have known until now.

Chef Abhijit Saha talked about the art of cooking, his experience while working nationally and internationally, and how sustainable dining is the future. He introduced everyone to how humans have destroyed the ecosystem in name of development, population boom is a big part of this issue. He also talked about how he is spreading the meaning behind sustainable dining through his organization and connection. His upcoming project of urban farming in Bengaluru airport will touch more people which gives hyper-local produce for the restaurants in or near the airport area. He mentioned the role of data science, Artificial intelligence, robotics in the kitchen to avoid food wastage and the use of this technology in facility planning in Bangalore airport.
